Lower Carb Cashew Flour Graham Cracker Like Recipe That Is Almost Sugar Free, And Has No Added Sugar
Behind the Recipe
This cashew flour graham cracker, with no added sugar recipe stems from a need for a low carb diet. Grain based flours add more carbs than most of us should be eating. After many years of searching, the answer was in a YouTube video that is titled and can be found at The Infinitely Customizable Keto Cracker? The recipe he uses is truly customizable and an added plus is that it illustrates a few different versions in the video.
When it comes to the original recipe, well . . . let’s just say that it wasn’t a favorite cracker. The primary reason for this is the distinct taste in baked items made with almond flour. Just do not like the flavor, especially in sweeter baked goods. That distinct taste does not pair well with the sweeter side of life, for me anyway.
Recipe Tweaks
Using cashew flour in place of almond flour fixed it. In any cracker recipe, but particularly in sweeter flavors, the mild and buttery taste of cashew flour cannot be beat. When you add in touch of sweetener and a little cinnamon, the result was the closest thing to a graham cracker that I have found thus far.
If you need a good graham cracker crumb for crusts, that is not filled with carbs, look no further. After trying a few things over the years, this recipe was a hit. It is perfect for to make the no added sugar cherry cheesecake dessert with. This dessert is a “never fail” at gatherings, and no one can tell that it is not made with actual graham cracker crumbs. Cashew Flour Like Graham Crackers, With No Added Sugar
Ingredients
- 1 cup cashew flour, + 2 tbsn
- 1 egg, lightly beaten
- 1/4 tsp baking soda
- 1 tbsn non-sugar sweetener
- 1/2 tsp cinnamon
Instructions
- Mix all dry ingredients together.
- Using a fork, mix in the beaten egg. Ensure that all ingredients are mixed well.
- Using the fork, press the dough against the side of the bowl, into a ball.
- Cut parchment paper to the size of your cookie sheet.
- Place ball of dough on that parchment paper and cover with a second sheet of parchment paper. Roll out the dough into a rectangle shape.
- Trim edges and use that dough to fill in where dough is thinner or where needed.
- Use a knife to precut the crackers and the fork to poke holes throughout the surface.
- Place the rolled out cracker dough, along with the parchment paper that it is on, into the cookie sheet.
- Bake at 325 degrees for 10 to 15 minutes, depending on your oven. Warning, once the crackers bake to the golden brown stage, they will over cook quickly beyond that. You will want to be sure to keep an eye on them.
