A Close To Sugar Free and Simplistic Cherry Cheesecake Dessert Recipe

This close to sugar free cherry cheesecake is definitely a favorite dessert that everyone loves. It is a recipe that was passed to me by a distant relative over 30 years ago, and was great for family dinners, carry-ins at church, and reunions. There were also many times that I made it just because, and it never lasted long. As for the origianl recipe, the only thing wrong with it was that it was made of almost pure sugar, carbs and fat. With a diagnosis of diabetes, working the recipe into a diabetic friendly cheesecake dessert was a must and this is where the recipe tweaks come in.

RECIPE TWEAKS

The powder whipped topping mix was the first recipe tweak. Using whipping cream and sweetening it with non-sugar sweetener cut the sugar content drastically. Another need was to cut fat. Switching the regular cream cheese for a high-quality low fat or fat free cream cheese helped a little. Lower fat cream cheese can be a trade off though. There is usually more sugar or carbs in low and nonfat versions. This is something you will want read labels per your individual diet needs for sure. At present, I am still trying to find a low fat option for the whipped topping portion of the recipe’s filling, that tastes good that is.

As for the crust, this was actually easy. Making homemade graham crackers using nut flour to cut carbs was the answer. After a couple tries, cashew flour was the best choice. While alot of people like almond flour, I prefer cashew flour for baking sweet or dessert type baked goods. It pairs much better with sweet, with its buttery taste and milder flavor. You can find the recipe for the cashew flour graham cracker recipe here. As for the cherry topping, a no sugar added cherry pie filling from your local grocer works well. Just add a little more non-sugar sweetener and it is that easy.

Ingredients
  

Crust

Filling

  • 8 ounce cream cheese
  • 1 cup whipping cream
  • 1 tsp vanilla flavor
  • 1/2 cup non-sugar sweetener

Topping

  • 1 20 oz can no sugar added cherry pie filling
  • 1/4 cup non-sugar sweetener

Instructions
 

Crust

  • Process graham crackers to a fine graham cracker crumb consistency, and mix in non-sugar sweetener.
  • Melt butter and use a fork to mix into graham cracker crumbs well.
  • Press into 8×8 baking pan as crust, and bake at 350 degrees for 7-10 minutes, depending on your oven. Remove and allow to cool enough to refrigerate to cold temperature.

Filling

  • Allow cream cheese to come to room temperature before use.
  • While crust is baking and cooling, whip vanilla and non-sugar sweetener into cream cheese for about 1 minute.
  • Pour whipping cream into cream cheese mixture and begin to whip together on low, to prevent splatter. Adjust speed to high and whip until mixture is a whipped cream and thicker consistency. Refrigerate until ready to build dessert.

Building Your Dessert

  • Spread whipped cream cheese mixture, evenly in graham cracker crust and top with
  • Mix non-sugar sweetener into no sugar added cherry pie filling, top the desert, cover tightly, and refrigerate for at least 12 hours.

Notes & Credits

When making this dessert for a get together of some sort, double the ingredients and build in a 9×11 baking pan.
Mixing different non-sugar sweeteners in my recipes relieves the distinct after taste of each sweetener. Try it!
