Crustless coconut cream pie is so good and coconut cream pie has been around for many years. According to daysoftheyear.com, recipes for coconut cream pie started showing up in American cookbooks in the early 1900s, after the process for shredding and drying the meat of the coconuts came about. This helped to overcame problems with trying to keep the fruit fresh during shipping. It is thought that the general idea of a cream pie may be able to trace its roots back to Europe, but the coconut cream pie may actually be an American invention. Regardless, it is a beloved dessert. As for me, I love anything coconut.
Recipe Tweaks
Since the recipe for this crustless pie just came to me one day, there are almost no tweaks. The first make was as simple as following the directions on the instant sugar free pudding package, then adding some coconut flavor. The second time around is when I made the changes. Instead of the two cups of cow’s milk, I traded out one cup of milk with coconut milk. The coconut flavor is still included to make that flavor more distinct. What else does coconut pie have in it? Coconut of course. The unsweetened dried coconut is usually easy to find in your grocery store and it completes this recipe perfectly.
It is my goal to make a couple more changes to this recipe. Instant sugar free pudding has a lot of carbs. The next tweak will be to make a homemade custard that will be sugar free and low carb. The final step will be to develop a crust that is great tasting, but is not full of carbs. That is probably going to be a challange but some day.
No Added Sugar Crustless Coconut Cream Pie
Ingredients
- 1 small pkg sugar free instant vanilla pudding
- 1 1/2 cup milk
- 1 tsp coconut flavoring
- 1/4 cup dried coconut
Instructions
- Mix the milk and coconut flavoring in a bowl.
- Mix in the dried coconut.
- Mix in the instant pudding. A whisk is a handy tool here.
- Place in an air tight dish and place in the fridge for at least 1 hour, to allow the dried coconut to rehydrate.
