Open cans of beets, measure out beet juice and pour into a medium size bowl with an air tight lid. Do not pour beets into bowl yet.
Measure out all other ingredients and pour into beet juice, stirring together.
Place all of the sliced beets into the liquid mixture, cover tightly.
Refriderate for 24 hours for time to marinate.
Notes
Sliced beets are better to use than whole in this recipe, due to having more exposed surface to marinading. If you can only buy whole beets, I would suggest slicing before marinading.Because these beets are pickled , they last a bit in the fridge.A special reminder to wear rubber gloves when handling beets if you don't prefer red hands.
